I bought a roast and I have potatoes, carrots, and onions. I want to throw them in the crock pot but what do I put with it? How long do I cook it for? I want to keep it simple, all the recipes I have call for a ton of herbs and stuff. Thanks a lot!

i just throw all that in with some beef broth, sliced onion and season my roast with my favorite stuff
cook on low about 8 hrs and it should be really good
2 ways. All your stuff with a little water and 2 Bay leaves (dried or fresh) and Kosher salt on the meat. Plain but tasty!
OR: put in your ingredients and a little water and one onion soup mix packet. Very tasty and then thicken any liquid for a delightful gravy! Do not add any other salt to this one!
I would cook on high for about an hour then medium or low for at least 4 more hours.
(Potatoes not peeled should be washed and pricked all around and just peel the onions and leave whole or cut in half. Carrots should be peeled and rinsed off.)
Crock Pot Roast Beef
Things You’ll Need:
2-pound beef roast (does not matter which cut)
10-15 baby red potatoes
2 large onions or 1 pound bag of frozen baby pearl onions
1 pound of carrots
2 tsp. Salt
2 tsp. Pepper
1 tbs. Onion powder
1 tbs. Garlic powder
1 tbs. Cayenne Pepper
8 cups of water
1 tbs. Cornstarch (optional)
2 thick sliced bacon strips
Step1
Turn your crock pot on to 350 degrees Fahrenheit. Slice the bacon into thirds. Cook the bacon in the crock pot until the fat is translucent.
Step2
Add the roast. Season the roast with salt, pepper, onion powder, garlic powder, and just a touch of cayenne pepper. Cook the roast until it is brown on both sides (about 20 minutes each side).

Add about 8 cups of water. Let the beef simmer in the water for six hours. If it starts to boil, you can turn down the temperature to about 300 degrees Fahrenheit. If the water evaporates more than two inches, add a bit of water.

If you want a thicker gravy, scoop out about 1/2 cup of the broth and place it into a bowl. Add 1 tablespoon cornstarch to the bowl and whip until there are no lumps. While stirring the crock pot broth, add the cornstarch mixture to the ingredients in the crock pot.
Step5
Wash the potatoes, carrots and onions. Add in the potatoes skin-on. Depending on the size, you can either leave them whole or cut them in half. Cut the carrots into thirds and add the carrots. Peel and cut the onions into six pie shaped pieces. Add the onions.
Step6
If you added the cornstarch, turn the temperature up to 400 degrees Fahrenheit. Let the broth in the crock pot come to a boil. Boil for 10 minutes. Turn the temperature back down to about 325 degrees Fahrenheit. Let simmer for one and a half to two hours. Vegetables should be soft when pricked with a fork.
